Waldorf Salad

Salad Ingredients:

  • 1 Romaine Hearts
  • 3 Cups Spinach
  • 1/2 Cucumber
  • 1 Small Jar of Hearts of Palm
  • 1 Cup Red Grapes, Sliced in Half
  • 1/2 Cup Feta Cheese, Reduced Fat or Fat Free
  • 2 TB Pumpkin Seeds
  • 1 TB Sunflower Seeds
  • 2 TB Dried Cranberries
  • 1 Green Apple, Sliced

Dressing Ingredients:

  • Juice of 1/2 a Lemon
  • 2 TB Dijon Mustard
  • 2 TB EVOO
  • 2 TB White Wine Vinegar
  • 1/2 tsp. Dried Parsley
  • 1/4 tsp. Black Pepper
  • 1/4 tsp. Dried Organo


Prepare and chop all of the salad ingredients and place in a large serving bowl. Once the salad is prepared, place in the fridge to keep chilled.

Now for the dressing, add all of the dressing ingredients and whisk together in a small bowl until combined. Serve dressing on the salad or on the side to dress on your own.

This salad goes great with sautéed shrimp, grilled chicken or even on it’s own. Enjoy!
