Roasted Bruschetta

Opting for an easy and delicious way to add some oomph to your food? Try this fresh and aromatic Roasted Bruschetta Topping to accompany chicken, fish or pasta!

Here are the main ingredients and kitchenware needed to cook the topping:

  • 1 pint-size pack of grape tomatoes
  • 3 cloves of fresh garlic
  • 8-10 basil leaves
  • 2 TBS evoo
  • ¼ TSP red pepper flakes
  • Salt & Pepper to taste
  • Recommended Kitchenware: Pyrex glass dish

Prep time: 10 minutes; Cooking time: 30 minutes

First, cut each tomato in half and throw it in the Pyrex. Next, chop up the garlic cloves until fine and add to the tomatoes. For the basil, roll up all leaves and use a knife to make a Chiffonade. Add ¾ of the basil Chiffonade to the tomatoes and garlic, and reserve the rest to garnish at the end.

Once everything is added to the Pyrex, add the evoo, s&p and red pepper flakes and mix until all ingredients are fully combined.Set your oven to 350 degrees and place the topping inside to roast for 20 minutes.

After 20 minutes, take the topping out and use a fork to lightly mash the tomatoes. TIP: I highly recommend that you do this slowly given the tomatoes are very hot and tend to splash when you mash them. By doing this slowly, you avoid the chances of burning yourself. Once the mixture is mashed, place back in the oven to cook for 10 more minutes.

When the 10 minutes is up, take the mixture out of the oven to slightly cool and add the remainder of the fresh basil to the tomatoes. This adds a fresh kick to the topping!
