Hearty Vegetarian Chili

Grab a spoon, it’s time for Hearty Vegetarian Chili!
This recipe comes from Lightlife, and makes for the perfect vegetarian chili to dive into on Super Bowl Sunday.

1 package (12 oz) Lightlife® Smart Ground® Original
1 cup chopped white onion
1 cup chopped green bell pepper
1 cup sliced celery
2 Tbsp. vegetable oil
1 can (15 oz) red kidney beans, undrained
1 can (15.25 oz) whole kernel corn, undrained
2 cans (14.5 oz each) whole peeled tomatoes, undrained
1 can (6 oz) tomato paste
2 cloves finely chopped garlic
1 1/2 Tbsp. chili powder
1 1/2 Tbsp. ground cumin
1 tsp. salt


Sauté the onion, green pepper and celery in oil until translucent. Add the remainder of the ingredients and simmer 1 to 1 1/2 hours.

Feel free to top off with your fixings of choice: green onion, cheese, taco chips or sour cream.
