Chocolate Chip Matzo Farfel Cookies

Baking for Passover tends to be a challenge when you are limited with your ingredients… Not being able to use flour! I’ve created a parve for Passover chocolate chip cookie that includes matzo meal and farfel as the dry ingredients.

This recipe was inspired by my Nana. I follow her recipe for the dough part, but I only use chocolate chips. She instead, added cinnamon, nuts and raisins. It is completely up to you!

You can honestly make these all year round. They are crunchy, chocolatey and delicious!

This recipe yields three dozen cookies per batch.

Ingredients:

  • 2/3 Cup Vegetable Oil
  • 1.5 Cup Sugar
  • 4 Eggs
  • 1/2 tsp. Vanilla
  • 1/4 tsp. Salt
  • 2 Cups Streit’s Matzo Meal
  • 2 Cups Streit’s Farfel
  • 1 Cup Semi-Sweet Chocolate Chips

Directions:

Begin by using an electric mixer to blend your oil and sugar. Once combined, add the eggs, one at a time, and keep mixing. Now you can add your vanilla and salt, and mix some more.

Add the matzo meal and mix until the egg has been absorbed into the meal. Now, add the farfel one cup at a time and mix lightly.

Once all of the farfel is mixed in, add the chocolate chips and fold in. Use an ice cream scoop to perfectly portion the cookies onto a baking sheet that has been lined in parchment paper.

Bake in a 350-degreee oven for 20 minutes.
