Roasted Turkey Breast (in a hurry)

Recreate Thanksgiving on any night with The Domestic Girl’s Roasted Turkey Breast. Yes, even on a Monday night!

Granted, I didn’t cook a whole turkey like we would on Thanksgiving, but I cooked a large turkey breast. It came out moist, tasty and certainly delicious! With some tips from my Mom, I succeeded at making a lovely turkey dinner!

Ingredients:

  • 1 Turkey Breast: 2.25 lbs
  • 1 TB Canola Oil
  • 2 TB Orange Juice
  • Salt & Pepper
  • Poultry Seasoning (My Mom’s Recipe): It’s a mixture of Paprika, Onion Powder, Garlic Powder and Black Pepper
  • 1 Small onion
  • 1 Cup Cut Carrots
  • 5 Celery Stalks

Directions:

Place your chopped vegetables on the bottom of your Pyrex glass dish. Then, take your turkey breast and lay it over the veggies.

TIP: The vegetables create a bed for your turkey, preventing it from burning on the bottom

Take your oil and rub it all over the turkey breast. After, sprinkle your seasoning onto the breast so that it is thoroughly seasoned. Then, take a brush and brush the orange juice onto all surfaces of the meat.

TIP: Brushing your turkey with orange juice removes any poultry taste from the meat. (Another great tip from Grandma and Mom!)

Cook your breast in a 375-degree oven for 2 hours. Cover the turkey with foil for the first 90 minutes, and then finish cooking with the foil removed. This will encourage your meat to brown nicely.
